Tapioca Fry

Tapioca is widely consumed in the state of Kerala It is either boiled or cooked with spices. Tapioca with fish curry (especially Sardine) is a delicacy in Kerala. Thinly sliced tapioca wafers, similar to potato chips, are popular too. Cassava, often referred to as tapioca in English, is called Kappa . Tapioca is regarded as a staple food of the common man in Kerala.Varieties of food can be prepared by tapiocca and it is all time favorite for everyone who loves it.



Ingredients
Tapioca                  -4no
Shallots                  -6-8 no
Red chillys             -2no
Turmric pwd          -1/2 tsp
Mustard seeds       -1 tsp
Curry leaves          -Little
Salt to taste
Corainder leaves to garnish


Method
  • Clean the tapioca and pressure cook till it is very soft and tender.Add salt while pressure cooking.
  • Mean while Grind the shallots and red chillys to a paste and keep aside.
  • When the tapioca is done cut into small pieces.
  • In a frying pan add coconut oil,then add the mustard seeds.when it start to splutter add the curry leaves,turmeric pwd and the grinded paste.
  • Saute in medium flame till the raw smell goes.whn it is done add the tapioca and turn around nicely till it is coated well .
  • Switch off the flame and garnis with coriander.
  • This can be eaten as a snack or can be used as side dishs for rice and dosa.
