Tomatoes are often considered a vegetable, though in actuality
they are a citrus fruit. Tomatoes are an incredibly versatile food. They
are delicious eaten raw, in salads or on sandwiches, and take on a
wonderful sweetness when cooked. Their high acid content makes them a
perfect food for canning.
I had this recipe to try for a long time but continually passed
over it. Finally I decided to just give it a go, and in no time, this
dish has become one of my favorites and famous for many of my relatives n frnds. simple, fast, healthy, delicious.
Ingredients:
Tomatoes -1kg(ripe)
Tamarind -small lemon sized
Garlic -10-15 pods(slighly crushed)
Curry Leaves -few strig
Corainder leaves -few
Gingerly Oil+coconut oil - 200 ml
Salt to taste

To Dry Roast n Powder:
Zeera -1tsp
Mustard -1/2tsp
Zeera -1tsp
Mustard -1/2tsp
Dry chilly's -10-15no

Dry roast all these ingredients and keep aside.

- Grind the tomatoes and tamarind together and keep aside.
- In a heavy bottomed pan, add the oil(gingerly oil n coconut oil) .
- When the oil becomes hot,add the crushed garlic and curry leaves.
- when the garlic turns light golden brown,add the grinded tomatoes to it.Allow to boil till it becomes 3/4 of it.Keep stirring in between.
- Put the flame to medium inorder to avoid burning.
- When this thokku becomes 3/4,now add the grinded powder and stir well.simmer the flame and keep on stirring in between.
- When the oil start to come on top.Switch off the flame.
- Garnish with corainder leaves.And store in air tight bottle in refrigerator.
- Tis will last for one week in the fridge.
- Goes well with hot rice,dosa ,idli ,bread and also chappati.
- If u want more spicy u can add chilly powder to the thokku.
- If u feel oil is less u can add more to it.
