Haleem /Harees

Haleem.... a famous dish in hyderabad.Hyderabadis usually make this dish daily in Ramzan.Either it can eaten  as a main dish or as an evening snack...But i consider this as a main dish only.Because this dish is a heavy dish.This can be made with chicken,Mutton or Beef. But here i used chicken.
so... give it a try then u ll know how is this dish tastes.









Ingredients

To Marinate the chicken

Chicken                            -1kg
curd                                  -250ml
chilly powder                     -3 tsp(if u need more spiy add more)
Turmeric pwd                     -1\2 tsp
garam masala                    -1\2 tsp
ginger\garlic paste              -3 to 4 tbsp
cinamon                             -1inch size
cardamon                           -3
Cloves(kerambu)                -5
coriander leaves                  -1\2 cup(chopped)
pudina leaves                      -1\4cup(hopped)
onion fried and powdered      -1\2
shah zeera                          -2 tsp
greenchillies                        -3(chopped)
peppercorns                         -11\2tsp
salt                                      -to taste


To soak(for 1 hr)

Wheat(samba)                     -100gms
urad dal                               - 2 tbsp
chenna dal(kadala paruppu)   -2tbsp

Garnishing
Fry all th three items mentioned below in medium flame.onion shud b Golden brown.
1. Onion      -1
2. cashews -25 gms
3. Raisins   -25gms

corainder chopped
pudina(little)chopped
lemon(cut into 4)/cut into1/2
Greenchillies chopped(optional)



Method
  Marinate the chicken and keep aside for 3 hrs.After that put the chicken in the Pressure cooker and add two to three glasses of water (not more than tht) and allow to cook.After one whistle put the flame low.
Allow to cook in low flame for 1 1\4 hours. Then cool it (warm) and  put the chicken in mixy and grind coarsely.
Dont grind too pulpy it wont be nice (use whip button).
In the mean u put the B ingredients in cooker and allow to cook for 45 min.Then again  grind these B ingredient also coarsely.Mix both A and B.
Then in a  heavy bottomed pan (non stick is better)put 1\4 kg of ghee(mix oil and ghee it ll be good).
 Add all the grinded mixer into the pan and keep stiring till the ghee comes to the top.Or the texture of a haleem mixture bcomes almost halwa type.Not too watery like nor to thick. Should be medium.
When the ghee has come to the top put off the flame.Then in a serving bowl put some haleem and on the top of it garnish with fried onions,cashews,raisins(opt),corainder leaves and pudina leaves.squeeze little lemon on top of it when u start eating.
