Pudina/Mint corn rice

Hi Everybody....... Its very long gap since i ve put a new post on my blog.I was too busy  that i couldnt  post any new one.Today i decided to post a new recipe.Many of them must have heard about pudina corn rice.As u all know that pudina is very good for Blood Pressure(BP).So i thought to post a healthy recipe here.My mom in law is a BP patient.so i used to give her pudina made in different ways like-chutney,pudina lemon juice,rice,pudina lemon tea.....I will soon post these recipes.....


The recipe which i m posting is tasty and also easy to cook.I hope that my veiwers ll give it a try and tell me how it was.



Ingredients


Basmati rice        -1 cup
Onion(sliced)      -1 no
Cashew              -1tbsp
Corn                   -1/2 cup
Salt                     -to taste

oil/ghee               -2tbsp



For grinding
Pudina                -1 cup

Dry coconut        -1 tbsp
zeera                   -1tsp
Green chillys        -3-4 no
Ginger/garlic paste-1tsp






Method


  •  In a heavy  bottomed pan heat oil and  ghee.
  • Add the cashews saute for few mins till it becomes golden brown.
  • Then add the onions and corn and saute for a while.When it is done add the grinded paste into it and saute till the raw smell goes.
  • Then add the 1cup of water and when the water comes to boil add the rice and salt.close the  lid and cook.
  • when it is done garnish with sliced badam and corainder leaves if needed.
  • serve hot withCoconut Garlic Chutney and  Potato Fry.
