Khandvi/Besan rolls

Hi everyone.....Today i thought of making a different recipe. Most of them must have heard about Khandvi. Khandvi is Gujarati delicacy made using Gram Flour/Chickpea Powder and flavoured with tempering of mustard, sesame seeds, spicy green chillies and sweet coconut. It is a great snack......

As yummy as they are to eat, Khandvis are rather difficult to make. I discovered this 4 months before, but yesterday was the the perfect day to prepare. The Khandvis turned out to be pretty delicate and soft and the tempering added that extra zing to it!.Hope all my frnds who visit my blog will try it out.if u take little patience then diffinetly it is as easy as it is.

Ingredients
Besan/gramlour               -1cup
Yogurt                            -1 1/2cup
Water                             -2cup
Tumeric pwd                  -1/2 tsp
Salt to taste

Grind to paste:
Ginger                            -1 inch
Green chillies                  -7 to 8

Method
  • Mix all the ingredients and the ginger and chilly paste without any lumps.
  • Pour this mixer into the pan(non stick).
  • Keep stirring gently so that no lumps will be formed.
  • Make sure the flame is in medium.
  • Once it comes to boil, put the flame low and keep stirring continuosly.
  • Oil grease the plate(flat plate preferable)or kitchen top.
  • When u feel the batter is leaving the sides, spread a little batter on the plate (a thin layer)once it is cooled see if it coming or not.
  • If it is done then switch off the flame and spread the batter quickly on all the plates /kitchen top.spread as thin as possible.
  • Keep them to cool, when cooled cut horizontly, with the help of the knife turn it and just roll it.
  • Arrange the rolls in a plate .Take a pan add oil and splutter mustard seeds and curry leaves and pour it on the rolls and garnish with grated coconut.
