Carrot and Cilantro Soup

Carrot and cilantro soup is a light, refreshing soup that will warm you up. This is a great soup to make if you're tired of the standard chicken noodle or veggie soup.Carrots are rich in Vitamin A and Iron.Daily intake of carrot supply more blood to our body.Cilantro is very good source of antioxidants. Coriander has been used as a medicine for the relief of anxiety and insomnia.




I think this soup is a very healthy and rich in nutritious value.Infact this souptastes too good.Hope every one ll try this and give commands.

Ingredients
 1 white onion
 2 tablespoons butter
 1 bunch carrots
 2 or 3 potatoes
 Salt and pepper
 1 cup chicken stock
 1 bunch cilantro
 1 small  onion
 1 or 2 jalapeno peppers(optional)
 Juice of 1 lime



Method
  •  Peel and slice the onion and put it  in the butter over low heat, covered.
  •  Peel the carrots and potatoes and cut them in large chunks. Once the onions are fairly soft, add the carrots and potatoes, salt generously, and continue to saute, and covered, for about 10 minutes more. Add chicken stock to cover, and simmer until the vegetables are entirely cooked. Take the pot off the heat.
  •  Reserve a handful of cilantro leaves for salsa and put the rest of the cilantro into the soup pot. Puree the soup in a blender or food processor , and strain through a medium sieve. Adjust the seasoning with salt and pepper.
  •  Make a little salsa to your taste with the onion and jalapeno peppers, chopped; the lime juice; and the reserved coriander leaves, coarsely chopped.
  •  To serve the soup, bring back to a simmer, ladle into bowls, and garnish with the salsa
